Pink lemonade cupcakes

In honor of the new blog name...I give you pink lemonade cupcakes - found on Cast Sugar's blog.


Ingredients:
1 c. all-purpose flour
1/2 tsp. baking powder
1/4 tsp. baking soda
Pinch salt
1/2 c. granulated sugar
1/4 c. vegetable oil
2 egg whites
1/3 c. thawed frozen Pink Lemonade Concentrate
1/4 c. buttermilk
2 or more drops red food coloring

Preheat oven to 350 F. Line muffin pan with liners.

In a small bowl, combine flour, baking powder, baking soda and salt. Set aside.

In a large bowl, whisk together sugar, oil, egg whites and lemonade concentrate. Alternately whisk in flour mixture and buttermilk, making three additions of flour mixture and two of buttermilk, beating until just smooth. Add just enough food coloring to turn the batter a light shade of pink.

Scoop batter into liners (fill about three-fourths full). Bake in preheated oven for 20-25 minutes or until tops of cupcakes spring back when lightly touched. Let cool in pan on rack for 10 minutes. Remove from pan and let cool completely on rack. Top cooled cupcakes with frosting (see below).

Lemonade Buttercream:
3 c. + 3 Tbsp. confectioner’s sugar
1 stick unsalted butter at room temperature
1/8 tsp. salt
2 Tbsp. pink lemonade concentrate
Red food coloring

Add the butter, confectioner’s sugar, salt, lemon juice, and a few drops of food coloring to the stand mixer and mix on low using the paddle attachment until combined. Turn the speed to med-high until the buttercream is fluffy and uniformly pink. Pipe or spread onto cooled cupcakes.

Yum.

At the moment

Things I'm really into at the moment:


Long boarding. I finally gave into my urge of wanting to skateboard again when I received my tax return in the mail. With someone's advice, I decided on a longboard, and I've been in love with it ever since. I can't wait to get better at it! Also trying to talk my boyfriend and best friend into getting one, too.


Surviving Disaster. It's a pretty awesome show - I've been watching the full episodes online the past week. It has some pretty good advice that actually everyone should know. I also want to try to watch Sex and the City episodes. I always hated it until my mom made me go see the movie, and I actually really liked it. I've only watched a couple episodes, but I think it'd be great to get more into it.


Twilight books. Lame, I know. I never finished the third book and I hadn't read it in almost 2 years, but I picked it up this summer and finished it quickly. Ever since I got annoyed by the popularity of the movie I haven't gotten back into it, but reading it made me remember how good it is. I can't wait to finish Breaking Dawn. Besides that, I plan on reading a lot more this summer.


Old Nick shows. I found a channel on YouTube that has a ton of old shows - Hey Arnold!, Rugrats, As Told by Ginger, Rocko's Modern Life, Doug, etc. I plan to keep watching these and happily reminisce until I finish them all.


Ear piercings. My left ear hasn't felt very good since January. I've gotten two piercings in my cartilage since and I'm thinking about getting another one lower down, called a snug. It will hurt the most, but I think it'll look the coolest. Just not sure yet if I want to suffer any more.
